Homemade Pasta with cream sauce, crimini mushrooms and asparagus

Steamy dish! I whipped this together from ingredients laying around…

For some background, we bought another 10# of 00 flour so I could make pizza and pasta dough. In addition, we just got the kitchen aid extruder attachment so I could make other pasta besides our standard fettuccine. The kitchen aid extruder attachment sucks and I would not recommend it. It is a waste of money, extrudes super slow and doesn’t even fully form the “fusilli” pasta, pictured here. It produces the striations of the fusilli but does not twist them. So you’d have to hand twist each one yourself. We were too lazy to do that so I just portioned them into 10 oz bags and froze them in whatever fashion they lay.

This dish is crimini mushrooms, red onions, and spinach with an alfredo sauce. Pure heavy cream and a pad of butter to finish! Nothing really healthy about this, but so damn delicious! I sauteed the mushrooms and onion in chicken fat too. That is my go-to fat instead of vegetable oil these days. 😛
