At the start of this year, I made it a goal to post more kitchen creations this year. Though, I’ve been pretty absent from here. You know how it goes:
We get caught up with life, death, travel, and everything in between. This sums up my last couple of months pretty well.
Excuses aside, here’s a dish that’s healthy and hearty: roasted chicken breast (skin removed) with roasted root vegetables, asparagus, crimini mushrooms, onions, and steamed basmati rice. Going back to basics, vegetables are seasoned with salt & pepper and mushrooms have a hint of thyme.
