Chicken tarragon apple salad

I haven’t made this in awhile, but when life gives you two birds, you’d better use up all that chicken! 😛 Okay, I’m terrible with phrases, but whatever! This is so simple to do with leftover cooked chicken (cold). It’s a mayo-based “salad” with diced celery, apples, toasted almonds, lemon juice, tarragon, garlic, s&p. Add hot and sweet mustard to give it a little zing and thyme and parsley for more herbaceousness. This sits atop an acme bread (not so tasty and too bready) — I traditionally use and prefer a sourdough bread.


2 chicken breast, shredded or diced

3 celery, diced

½ C almonds, slivered

1 apple, small dice

¼ C mayo

2 T dijon or hot and sweet mustard

1 T parsley, minced

1 T thyme, minced

1 T tarragon, minced

2 lemons, juiced

s&p, to taste
