One of my goals this year is to eat fish at least once a week. Last month I wasn’t so good at accomplishing this! So here’s to a new month and a way to incorporate fish into breakfast.
I used my tortilla de patatas recipe as a base (since it was soooo good last time!) and added soy sauce, sesame oil, ginger, and wild coho salmon to give it an asian flavor profile. And what is a California breakfast without sliced avocados? 😉
There was a lot going on in this dish! Next time I think I will pair down the ingredients to just have eggs, potatoes, and salmon (no greens, leeks, and onions).
