I am the type of person that likes to clean out the fridge and use up what I’ve got on hand. So I had 4 chicken thighs that I used to make two different chicken salads. The photo above is my curry ketchup chicken crostini where I mix curry powder with my homemade ketchup, some dijon mustard, mayo, celery leaves, and diced apples. The photo below is my standard chicken tarragon salad which includes dijon, hot and sweet mustard, mayo, apples, celery, almonds, tarragon, thyme, lemon juice and zest. These are perfect hors d’oeuvres when entertaining and quite filling too.
