December was chicken month for me. I probably roasted four birds, cooking them two at a time. Brining and not brining. So, as expected, I had a lot of chicken meat to go through — hence, chicken pot pie, butter chicken, adding chicken to my jose romano, and here, chicken chow fun (which I usually make with beef because it’s more flavorful). Chicken chow fun is fine, but it’s no beef chow fun. I probably won’t make this again unless I’m running out of ideas on how to repurpose chicken.
