My boyfriend recently had a tooth problem and I wanted to make something that he could eat. We really didn’t have anything in the apartment except carrots, so I threw together a quick carrot soup (add in some onions and chicken stock for more flavor), and then realized that I have a whole bunch of frozen vegetables. So in went the butternut squash and that was that! The process of making this soup was sautéing all the vegetables first to get a nice caramelization, adding any seasonings and liquid and transferring it to a Vitamix to puree. I then return it to the burner and bring it up to a boil and reduce as needed.
