Banana coffee muffcakes

banana coffee muffcakes

Cupcakes are too sweet and muffins are barely sweet. This is my attempt at the in between — a muffcake. These are deliciously moist and satisfying. See recipe below:

Dry:
6 oz apf
1 tsp baking soda
½ tsp baking powder
5 oz light brown sugar
½ tsp cinnamon
½ tsp cloves
½ tsp cardamom
1 1/2 tsp fine sea salt

Cold, wet:
⅛ C buttermilk
3 ripe bananas, mashed
1 tsp vanilla extract
1 egg

Hot, wet:
2 oz honey
2 T + 4-6oz hot water, coffee grounds
2T coconut oil

Mix wet with wet, then add dry. Do not over mix. Pour into cupcake papers, top with chocolate chips and and bake at 350 for 30 min.
