Vinegar Potatoes

Vinegar potatoes

This is a dish that is reminiscent of Dongguan, China. I was at a restaurant and basically had eaten a whole dish of this by myself! It’s typically served as an appetizer and is sour, spicy, and just a subtle dash of sugar to balance the vinegar. The potatoes are cooked but still crunchy and addictive. Ingredients are:

– Potatoes, julienne
– Carrots, julienne
– Green onions, julienne
– Red and/or Green bell peppers, julienne
– Szechuan red pepper corns (toasted in the oil for flavor, then discarded)
– Chili peppers (I use Thai)
– White distilled vinegar or Rice wine vinegar
– Soy sauce (just a tad)
– S&P

Oh, and it can be eaten cold (which is nice on a hot day!)
