Pork Spring Rolls

I make these every once and awhile (they’re just time consuming to assemble) and typically make variations based on the following ingredients:

– Ground pork, marinated in hoisin, oyster, garlic, ginger, sesame and soy
– Vermicelli noodles
– Rice paper
– Red leaf lettuce
– Carrots, julienne
– Cucumber, julienne
– Bean sprouts
– Cilantro
– Mint

I then pair it with a peanut dipping sauce, which is essentially a few ingredients like soy sauce, peanut butter, rice wine vinegar, water, sugar, and fish sauce. Tasty, refreshing, and filling!
