Pickled beets and goat cheese salad

I simmered my beets a couple days prior, retained the beet liquid and added apple cider vinegar, white distilled vinegar, sugar, thyme, black peppercorns, rosemary, and garlic for flavor infusion. These beets are slightly red-orange because I used red beet liquid on golden beets. 😛
