Home fries – best potatoes ever! Followed ATK’s instructions to yield a super fluffy, light, yet crunchy on the outside and tasty potato. The key is to parboil potatoes in baking soda for a minute, drain water, return to pot to remove excess moisture, add seasonings (s&p, thyme, rosemary), transfer to baking sheet that’s been pre-heating in a very hot oven (I set it at 450) and bake away. Turn potatoes at least half way through to brown the other sides.
