Mango pineapple coconut mousse cake

5 layers, from top to bottom:

– mango pineapple gelee w/mirror glaze
– mango pineapple mousse
– coconut sponge cake w/toasted, shredded coconut
– mango pineapple mousse w/fresh diced pineapple and mango
– coconut sponge cake w/toasted, shredded coconut

The outer cake / joconde is made from cigarette paste and emmanuel sponge. I used liquid food coloring which didn’t turn out very well — so next time I’ll be using the fat-soluble colors to get a better result. Overall, the cake was delicious and I would make it again in a heartbeat…except for the fact that it took me a day and a half to make and assemble. It is very time consuming — but well worth the effort for a special occasion.
