This was a lot easier than I had imagined. It is essentially, a meringue + gelatin. I used a piping bag to pipe long rows of marshmallow, dusted with confectioners sugar and cornstarch and allowed to set for a few hours before I cut them into squares. I think next time I will just dump it in a casserole dish or baking sheet and cut out rectangles. Might be easier than having a sticky, gloopy mess of marshmallow everywhere! Found it on our walls and cabinets the next day. 😛
These keep well for only a couple of days and then they lose their elasticity. We also put them in our homemade rocky road ice cream. We’ll see how they keep up in the freezer.
