Entremet – Dark cherry and pistachio

From bottom layer to top: pistachio sponge cake, dark cherry gelee, dark cherry mousse, sponge cake, dark cherry mousse, dark chocolate ganache, pistachio shards, chopped pistachio, and dark cherries. The outside joconde is made from cigarette paste (brown) with a wood grain tool and a layer of Emmanuel sponge cake (the lighter areas).
