My first attempt at making tamale pie. Below is my recipe:
1 yellow onion, diced
1 green bell pepper, diced
1 can green chili peppers (4 peppers), diced
1 can diced tomatoes
1 can tomato sauce
1-2 C sweet white corn
1 can black olives, sliced
1 T adobo sauce
1 ½ C milk
4 T butter
1 C cornmeal
1 C shredded monterey jack cheese
Preheat oven to 350 degrees Fahrenheit.
Saute beef, vegetables, and pour in sauces. Season as needed.
Boil milk, butter, cornmeal, and salt in heatproof glass for 30 sec – 1 min in microwave.
Whisk in two eggs and cheese.
Fill casserole dish with filling and top with topping.
Bake for 45-60 minutes.
