2C 00 flour
1 ¼C semolina flour
1T olive oil
¾ – 1C water
2 eggs
pinch of salt

Yields approximately 6 servings of pasta

    1. Hi Elly-

      Making pasta is super easy — though you just need some patience for allowing the gluten of the dough to relax after you’ve mixed and kneeded. I find that allowing it to relax in the fridge overnight works best, although you very well could use it after 20 minutes — it just may be tougher to work with. Let me know if you have any questions if you decide to make them. Also, they freeze very well, so don’t worry about making too much. 🙂
