Similar to zhajiangmian, this dish is essentially pork and noodles. A few other ingredients are brown bean paste, sugar, cucumbers, carrots (blanched), cilantro, shiitake mushrooms, tofu, green onions, s&p, sesame oil, chili oil, hoisin sauce, and soy sauce. The sauce can be as thick or thin as you like it. I tend to prefer more of a soupy consistency, but that’s probably because my mom has always made it that way. The thicker, paste version however, is also very good.
