I made the caramel filling for this tart and shaved the edges of the tart with a microplane to even it out. The chocolate topping is a yummy ganache. We used the pastry guns to expedite the process. 9 oz carmalized sugar mixed with 5 oz heavy cream. When it sets, it should be like a snickers bar caramel topping.
