In the past couple of days at the cookie station, I’ve made batter for oatmeal raisin cookies, chocolate chip cookies, double chocolate chip cookies, peanut butter cookies, coconut macaroons, Russian tea/Mexican wedding cookies and these beautiful, simple, almond spritz cookies with raspberry filling. This cookie was actually “fun” to pipe swirls with a medium sized, star pastry tip and then pipe the filling with a small, circular pastry tip.

On a side note, since our school was doing a fundraising today, our class had the “opportunity” to make around 300 fortune cookies and 300 dan tat (egg tarts), in addition to everything else we were already doing for usual production. It was good experience, but time consuming. It required a lot of people to handle hot fortune cookies in order to mold them quickly before they cracked, in addition to pressing pie dough over and over into small tartlets for the egg tarts, days on end…

Next station: plated desserts!
