3 beets grated on a box grater, shredded cabbage, 1 onion, 3 carrots, 6 cups of beef stock, 3 Tablespoons red wine vinegar, lemon juice, s&p, dill, parsley, and sour cream.

  1. Thanks Anastasia! This was my first time making and eating borscht, so it was definitely a challenge in terms of figuring out what it’s “supposed” to taste like. It was hearty from the beef stock, slightly crunchy from the cabbage, tangy from the tomatoes, sweet from the beets, and richer in texture from the sour cream.
