Easy, delicious, potato soup. Roasted vegetables and garlic pureed in the Vitamix. Recipe below.

 

Potato Soup

2 Yukon gold potatoes
3-4 cups of chicken stock
1 celery stalk
1 carrot
3 roasted garlic cloves
olive oil
½ cup whole milk
lemon juice, salt & pepper to taste

  1. Dice potatoes and cut carrot and celery stalk in half. Cut top off garlic cloves.
  2. Place all ingredients on a baking sheet.
  3. Drizzle olive oil over vegetables.
  4. Sprinkle with salt.
  5. Roast at 375 degrees for 50 minutes.
  6. Heat chicken stock in saucepan.
  7. Transfer chicken stock and roasted vegetables to Vitamix and puree.
  8. Add milk slowly until desired consistency.
  9. Squeeze lemon juice and season with salt & pepper to taste.
